AI agents read each country's official retail price series: national statistics offices and market information systems, compiled by FAO's Food Price Monitoring and Analysis tool (GIEWS FPMA).
A value is kept only with the quote that carries it, checked word for word against the source page. Nothing is estimated or carried forward; a missing week stays empty.
Every value is converted to US dollars and checked against the plausible range for a kilogram of wheat flour. A value outside it is held for review instead of published.
Local prices are converted to US dollars per kilogram at the exchange rate of the observation day. Official exchange rates are used, so where the parallel market rate is much weaker the dollar value reads high.
