AI agents read each country's official retail price series: national statistics offices and market information systems, most of them compiled by FAO's Food Price Monitoring and Analysis tool (GIEWS FPMA).
A value is kept only with the quote that carries it, checked word for word against the source page. Nothing is estimated or carried forward; a missing week stays empty.
Every value is converted to US dollars and checked against the plausible range for a kilogram of rice. A value outside it is held for review instead of published.
Local prices are converted to US dollars per kilogram at the exchange rate of the observation day; prices per pound are converted to kilograms. Official exchange rates are used, so where the parallel market rate is much weaker the dollar value reads high.
